Ingredients
Scale
1/4 cup low-sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
1 teaspoon brown sugar
1/2 teaspoon black pepper
Instructions
In a medium bowl, whisk together the soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, brown sugar, and black pepper until the sugar dissolves. This is your marinade for tuna steak.
Place your tuna steaks in a resealable plastic bag or a shallow dish.
Pour the marinade over the tuna, ensuring both sides are coated well.
Seal the bag or cover the dish. Marinate in the refrigerator for 20 to 30 minutes. Do not marinate longer than 30 minutes, as the acid in the vinegar can start to change the texture of the fish.
Remove the tuna from the marinade and pat it dry with paper towels before cooking. Discard the remaining marinade.
Grill or sear the tuna steaks to your desired doneness.
Notes
For an extra kick, add 1/2 teaspoon of sriracha to the marinade mixture.
Patting the tuna dry before cooking helps you get a better sear.
This marinade works well for quick grilling or searing.
