Prepare quick, savory crisps using spinach, feta cheese, and flaky pastry for an easy Mediterranean appetizer.

Ingredients

Scale
  • 1 package (14.1 ounces) refrigerated pie crusts or puff pastry sheets
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 5 ounces fresh spinach, chopped
  • 4 ounces feta cheese, crumbled
  • 1/4 teaspoon dried oregano
  • Pinch of black pepper
  • 1 egg, lightly beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 3 minutes.
  3. Add the chopped spinach to the skillet. Cook until the spinach wilts completely, about 2 to 3 minutes. Remove from heat and let the mixture cool slightly.
  4. In a bowl, combine the cooled spinach and onion mixture, crumbled feta cheese, oregano, and black pepper. Mix well.
  5. Unroll the pastry sheets onto a lightly floured surface. Cut each sheet into 12 equal squares (you should have 24 squares total).
  6. Place about 1 teaspoon of the spinach and feta filling onto the center of half of the pastry squares.
  7. Brush the edges of the filled squares lightly with the beaten egg. Place an empty pastry square on top of each filled square. Press the edges firmly together with a fork to seal the filling inside.
  8. Brush the tops of the sealed crisps lightly with the remaining egg wash. Cut a small slit in the top of each crisp to allow steam to escape.
  9. Bake for 12 to 15 minutes, or until the pastry is golden brown and puffed.
  10. Remove from the oven and let cool slightly before serving.

Notes

  • For extra flavor, add 1/2 teaspoon of lemon zest to the filling mixture.
  • If you prefer a different shape, you can cut the pastry into triangles or circles instead of squares.
  • You can substitute puff pastry for pie crust for a flakier texture.
