Make this simple, layered dessert using graham crackers, pudding, and a chocolate glaze. It requires no oven time and sets in the refrigerator.

Ingredients

Scale
  • 1 box (14.4 ounces) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 container (8 ounces) frozen whipped topping, thawed
  • 1 box (14.1 ounces) graham crackers
  • 1 cup cold water
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup milk
  • 1 tablespoon butter

Instructions

  1. Prepare the pudding: Whisk the instant vanilla pudding mix with 3 cups of cold milk for two minutes. Let it sit for five minutes. Gently fold in the thawed whipped topping until combined.
  2. Arrange the first layer of graham crackers in the bottom of a 9×13 inch baking dish. You may need to break some crackers to fit the edges.
  3. Spread half of the pudding mixture evenly over the graham cracker layer.
  4. Place a second layer of graham crackers over the pudding.
  5. Spread the remaining half of the pudding mixture over the second graham cracker layer.
  6. Top with a final layer of graham crackers. Cover the dish tightly with plastic wrap.
  7. Chill the cake in the refrigerator for at least four hours, or until firm.
  8. Prepare the chocolate glaze: In a small saucepan, combine the chocolate chips, 1/4 cup milk, and butter. Heat over low heat, stirring constantly, until the chocolate is melted and the mixture is smooth. Do not boil.
  9. Remove the cake from the refrigerator. Pour the warm chocolate glaze evenly over the top layer of graham crackers. Spread quickly to cover the surface.
  10. Return the cake to the refrigerator for another 30 minutes to allow the glaze to set before slicing and serving.

Notes

  • You can use chocolate instant pudding instead of vanilla for a richer flavor profile.
  • For a cleaner slice, run your knife under hot water and wipe it dry between cuts.
  • This dessert tastes best when made a day ahead, allowing the graham crackers to soften slightly.
