Make these simple, refreshing coconut lime bars without using your oven. They feature a graham cracker crust and a tangy, creamy filling.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup unsweetened shredded coconut, plus 1/2 cup for topping
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1/4 teaspoon vanilla extract

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium bowl, combine the graham cracker crumbs and 1/4 cup sugar. Pour in the melted butter and mix until the crumbs are evenly moistened.
  3. Press the crumb mixture firmly and evenly into the bottom of the prepared pan to form the crust. Place the pan in the freezer while you prepare the filling.
  4. In a separate bowl, whisk together the sweetened condensed milk, 1/2 cup shredded coconut, lime juice, lime zest, and vanilla extract until well combined.
  5. Pour the filling mixture over the chilled crust. Spread it evenly.
  6. Sprinkle the remaining 1/2 cup of shredded coconut over the top of the filling.
  7. Cover the pan loosely with plastic wrap and refrigerate for at least 4 hours, or until the bars are completely set.
  8. Use the parchment paper overhang to lift the bars from the pan. Slice into squares before serving.

Notes

  • For a gluten-free option, substitute gluten-free graham crackers for the standard crumbs.
  • If you prefer a firmer set, chill the bars overnight.
  • Use fresh lime juice for the best flavor; bottled juice changes the texture and taste.
