Ingredients
Scale
1.5 lbs chicken breast, cut into 1-inch pieces
1 large head of broccoli, cut into florets
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup low-sodium soy sauce
1/4 cup honey
2 tablespoons rice vinegar
1 tablespoon minced garlic
1 teaspoon grated fresh ginger
1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
Optional: Sesame seeds for garnish
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
In a large bowl, toss the chicken pieces with olive oil, salt, and pepper. Spread the seasoned chicken in a single layer on one half of the prepared baking sheet.
Place the broccoli florets on the other half of the baking sheet.
In a small bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, and grated ginger to create the honey garlic sauce.
Pour half of the sauce mixture evenly over the chicken pieces on the baking sheet. Toss the chicken gently with your hands to coat.
Bake for 12 minutes.
While the chicken bakes, pour the remaining half of the sauce into a small saucepan. Whisk in the cornstarch slurry and bring the sauce to a simmer over medium heat, stirring constantly until it thickens slightly. Remove from heat.
After 12 minutes of baking, remove the pan from the oven. Add the broccoli florets to the pan and toss them with the pan drippings.
Return the pan to the oven and bake for another 8 to 10 minutes, or until the chicken is cooked through and the broccoli is tender-crisp.
Remove the pan from the oven. Drizzle the thickened honey garlic sauce over the chicken and broccoli. Toss everything gently on the pan to coat.
Serve immediately. Garnish with sesame seeds if you like. This is a perfect low carb chicken broccoli dinner option.
Notes
For a sheet pan chicken and broccoli meal, make sure your chicken pieces are roughly the same size so they cook evenly.
If you prefer a crispier texture, you can broil the dish for the last 1-2 minutes, watching carefully to prevent burning.
This recipe works well served over rice or cauliflower rice for a complete meal.
