Enjoy a classic creamy beef stroganoff made easily in one pot. This recipe is perfect for busy families who want a delicious and comforting meal.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound beef sirloin, thinly sliced
  • 1 large onion, chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups beef broth
  • 1/2 cup sour cream
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste
  • Cooked egg noodles, for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add beef and cook until browned. Remove beef from the pot and set aside.
  3. Add onion and mushrooms to the pot and cook until softened, about 5-7 minutes.
  4. Stir in garlic and cook for 1 minute more until fragrant.
  5. Sprinkle flour over the vegetables and stir to coat. Cook for 1 minute, stirring constantly.
  6. Gradually whisk in beef broth until smooth. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
  7. Return beef to the pot. Reduce heat to low, cover, and simmer for 10 minutes, or until beef is tender.
  8. Stir in sour cream and Dijon mustard. Cook for 2-3 minutes until heated through, but do not boil.
  9. Season with salt and pepper to taste.
  10. Serve hot over cooked egg noodles.

Notes

  • For a richer flavor, use a good quality beef broth.
  • Adjust the amount of Dijon mustard to your preference.
  • If you don’t have sour cream, you can use plain Greek yogurt.
