Make a complete, flavorful taco dinner using only one pot for minimal cleanup. This creamy pasta dish combines ground meat, taco seasoning, and cheese.

Ingredients

Scale
  • 1 pound ground beef or turkey
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 4 cups beef or chicken broth
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 cup frozen corn
  • 12 ounces uncooked medium pasta shells or rotini
  • 4 ounces cream cheese, cut into cubes
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup water (optional, for thinning)

Instructions

  1. Brown the ground meat and chopped onion in a large pot or Dutch oven over medium heat. Drain off any excess grease.
  2. Stir in the taco seasoning mix and cook for 1 minute until fragrant.
  3. Pour in the broth, diced tomatoes with chilies, frozen corn, and uncooked pasta. Stir well to combine.
  4. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 12 to 15 minutes, stirring occasionally to prevent the pasta from sticking to the bottom.
  5. Once the pasta is tender and most of the liquid is absorbed, remove the pot from the heat.
  6. Add the cream cheese cubes and shredded cheese. Stir continuously until the cheese is fully melted and the sauce is creamy.
  7. If the sauce is too thick, stir in a small amount of water until you reach your desired consistency.
  8. Serve immediately.

Notes

  • For a spicier dish, add 1/2 teaspoon of cayenne pepper with the taco seasoning.
  • You can substitute ground turkey for ground beef.
  • Top individual servings with sour cream, chopped cilantro, or crushed tortilla chips.
