Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg, lightly beaten
  • 1/2 cup pizza sauce
  • 1/2 cup mini pepperoni, chopped

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. Stir in the Parmesan cheese and half of the mozzarella cheese.
  4. In a separate bowl, mix the milk, vegetable oil, and egg.
  5. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  6. Gently fold in the chopped pepperoni.
  7. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  8. Top each muffin with a small spoonful of pizza sauce.
  9. Sprinkle the remaining mozzarella cheese over the sauce.
  10. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let the pizza muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For freezer lunches, cool the mini pizza muffins completely, then place them in a freezer-safe bag. Reheat from frozen in a toaster oven or microwave until warm.
  • Ethan’s Tip: Add a tiny pinch of dried oregano to the dry ingredients to boost the classic pizza flavor.
  • If you do not have mini pepperoni, use regular pepperoni cut into small pieces.
