Learn how to make incredibly juicy, budget-friendly pork shoulder steaks using a simple sweet soy marinade. This recipe works perfectly for summer grilling or easy oven baking.

Ingredients

Scale
  • 4 pork shoulder steaks (about 1 inch thick)
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup packed brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Prepare the marinade: In a medium bowl, whisk together the soy sauce, brown sugar, minced garlic, vegetable oil, ground ginger, black pepper, and red pepper flakes if you are using them. Stir until the brown sugar dissolves mostly.
  2. Place the pork steaks in a large zip-top bag or shallow dish. Pour the marinade over the steaks, making sure they are fully coated.
  3. Marinate the pork steaks in the refrigerator for at least 2 hours, or up to 8 hours for the best flavor penetration. Do not marinate longer than 8 hours due to the soy sauce content.
  4. Preheat your grill to medium heat (about 375 degrees F) or preheat your oven to 400 degrees F.
  5. Remove the steaks from the marinade, letting excess drip off. Discard the remaining marinade.
  6. For Grilling: Place steaks on the oiled grill grates. Grill for 5 to 7 minutes per side until nicely browned and cooked through.
  7. For Baking: Place steaks on a foil-lined baking sheet. Bake for 18 to 22 minutes, flipping halfway through, until cooked through.
  8. Check the internal temperature with a meat thermometer. Pork is safe when it reaches 145 degrees F. For maximum tenderness, aim for 150 to 155 degrees F.
  9. Let the pork steaks rest for 5 minutes before serving.

Notes

  • For extra flavor when baking, place a few thin slices of onion on the baking sheet under the steaks.
  • This sweet soy pork steak marinade works well with other cuts, but shoulder steaks are the most budget-friendly choice.
  • If you want a thicker glaze, reserve 2 tablespoons of the marinade before adding the raw meat, boil it rapidly for 1 minute, and brush it on the steaks during the last minute of cooking.
