Make simple, flavorful salmon and rice bites perfect for appetizers or meal prep. These are quick to assemble and hold their shape well.

Ingredients

Scale
  • 1 cup cooked short-grain sushi rice, cooled
  • 6 oz cooked salmon, flaked
  • 2 tablespoons mayonnaise (or Greek yogurt for lighter option)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha (optional, for spice)
  • 1 green onion, thinly sliced
  • 1 tablespoon toasted sesame seeds, plus extra for coating
  • Pinch of salt and pepper

Instructions

  1. In a medium bowl, combine the cooled cooked rice, flaked salmon, mayonnaise, soy sauce, sesame oil, sriracha (if using), green onion, and sesame seeds.
  2. Mix gently until all ingredients are just combined. Do not overmix, or the rice will become sticky and mushy.
  3. Taste the mixture and add salt and pepper as needed.
  4. Place extra toasted sesame seeds on a small plate.
  5. Scoop about 1 tablespoon of the salmon mixture and gently roll it into a small ball or compact shape using your hands.
  6. Roll the formed bite lightly in the sesame seeds to coat the outside.
  7. Repeat with the remaining mixture.
  8. You can serve the bites immediately at room temperature, or chill them for 30 minutes to help them firm up before serving.

Notes

  • Use leftover cooked salmon for convenience.
  • If you prefer a crispier texture, you can lightly pan-fry the formed bites in a non-stick skillet with a small amount of oil for 1-2 minutes per side until golden brown.
  • For a make-ahead option, store the formed bites in an airtight container in the refrigerator for up to 2 days.
