Follow this recipe to make chewy cookies filled with homemade caramel and topped with flaky sea salt.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt (for dough)
  • 1 cup soft caramel candies, unwrapped (or 1 cup homemade caramel sauce, thickened)
  • Flaky sea salt, for topping

Instructions

  1. Preheat your oven to 375 degrees F. Line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
  3. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Press a few pieces of soft caramel candy into the center of each dough ball, or spoon a small amount of thickened caramel sauce onto the center.
  7. Bake for 9 to 11 minutes, or until the edges are golden brown and the centers are still slightly soft.
  8. Remove from the oven. Immediately sprinkle the tops of the warm cookies with flaky sea salt.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chewier cookie, chill the dough for 30 minutes before baking.
  • If using homemade caramel sauce, cook it down slightly until it is thick enough not to run excessively during baking.
  • Use flaky sea salt, like Maldon, for the best texture and flavor contrast.
