Make a rich, silky shrimp alfredo sauce quickly. This recipe delivers a restaurant-quality, creamy pasta dish ready in about 30 minutes, perfect for a weeknight or date night.

Ingredients

Scale
  • 1 pound fettuccine pasta
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese, plus more for serving
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Cook the fettuccine according to package directions until al dente. Reserve 1 cup of the pasta water before draining. Set pasta aside.
  2. Season the shrimp lightly with salt and pepper.
  3. In a large skillet over medium heat, melt the butter. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown.
  4. Add the shrimp to the skillet. Cook for 2 to 3 minutes per side until pink and cooked through. Remove the shrimp from the skillet and set aside.
  5. Reduce the heat to low. Pour the heavy cream into the skillet. Stir constantly and let it warm through for about 2 minutes. Do not boil the cream.
  6. Remove the skillet from the heat. Gradually whisk in the grated Parmesan cheese, a little at a time, until the sauce is smooth and creamy. Stir in the salt, pepper, and nutmeg.
  7. If the sauce is too thick, add the reserved pasta water, one tablespoon at a time, until you reach a silky consistency.
  8. Return the cooked pasta and the shrimp to the skillet. Toss everything gently to coat evenly with the sauce.
  9. Serve immediately, garnished with extra Parmesan cheese and fresh parsley.

Notes

  • Use freshly grated Parmesan cheese for the best melting quality and smoothest sauce. Pre-grated cheese contains anti-caking agents that can make the sauce grainy.
  • Keep the heat low when adding the cheese to prevent the sauce from separating or becoming oily.
  • For a Cajun variation, add 1 teaspoon of Cajun seasoning to the shrimp before cooking.
