Make a moist and tangy cornbread using your sourdough discard. This recipe yields a flavorful side dish perfect for serving with soup or chili.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1/2 cup sourdough discard (unfed starter)
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup buttermilk
  • 1/4 cup melted unsalted butter
  • 1/4 cup honey (for batter)
  • 2 tablespoons honey (for glaze)
  • 1 tablespoon melted butter (for glaze)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Grease and flour an 8×8 inch baking pan or line a muffin tin.
  2. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
  3. In a separate medium bowl, whisk the sourdough discard, egg, buttermilk, 1/4 cup melted butter, and 1/4 cup honey until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
  5. Pour the batter into the prepared pan.
  6. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cornbread bakes, prepare the glaze: Whisk together the 2 tablespoons of honey and 1 tablespoon of melted butter.
  8. Remove the cornbread from the oven. Immediately brush the honey glaze evenly over the warm top surface.
  9. Let the cornbread cool in the pan for 10 minutes before slicing and serving.

Notes

  • For a savory version, omit the sugar and honey, and add 1/2 cup shredded cheddar cheese and 1 diced jalapeño to the batter.
  • If you do not have buttermilk, mix 1 cup of regular milk with 1 teaspoon of white vinegar or lemon juice and let it sit for 5 minutes before using.
  • This cornbread freezes well once cooled. Wrap tightly in plastic wrap and foil.
