Use your sourdough starter leftovers to make this quick sourdough discard pizza dough. This recipe requires no long rise time, resulting in a flavorful, chewy, and crispy crust perfect for weeknight sourdough pizza.

Ingredients

Scale
  • 1 cup sourdough discard (unfed starter)
  • 1 cup all-purpose flour
  • 1 teaspoon instant yeast
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1/2 cup warm water (approximately)

Instructions

  1. In a large bowl, combine the sourdough discard, flour, instant yeast, and salt. Mix until crumbly.
  2. Add the olive oil and slowly pour in the warm water, mixing until a shaggy dough forms. You may need slightly more or less water depending on your discard hydration.
  3. Turn the dough out onto a lightly floured surface. Knead for 5 to 7 minutes until the dough is smooth and elastic. This kneading develops the structure since we are not relying on a long fermentation.
  4. Divide the dough in half for two medium pizzas, or use the whole batch for one large pizza.
  5. Preheat your oven and pizza stone (if using) to 475 degrees Fahrenheit (245 degrees Celsius).
  6. Let the dough rest for 10 minutes while the oven heats up. This short rest helps the gluten relax.
  7. Shape the dough to your desired thickness. For a crispier crust, roll it thin. For a chewier crust, gently stretch it by hand.
  8. Transfer the dough to a prepared pizza peel or baking sheet. Add your favorite toppings.
  9. Bake for 10 to 15 minutes, or until the crust is golden brown and the cheese is bubbly.

Notes

  • For a tangier flavor, you can let this dough rest in the refrigerator for up to 24 hours, though it is designed to be quick.
  • If you prefer a truly no yeast pizza dough sourdough experience, omit the instant yeast, but you must let the dough rest for at least 4 hours at room temperature to allow the wild yeast in the discard to work.
  • Use high heat for the best crispy sourdough discard pizza results.
