Ingredients

Scale
  • 1 medium spaghetti squash
  • 1 tablespoon olive oil
  • 1 pound ground Italian sausage (or ground turkey/beef)
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • 8 ounces ricotta cheese
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet.
  4. Roast for 30-40 minutes, or until tender when pierced with a fork.
  5. While the squash is roasting, heat olive oil in a large skillet over medium heat.
  6. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  7. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  8. Stir in the minced garlic and cook for 1 minute more until fragrant.
  9. Pour in the crushed tomatoes, basil, oregano, salt, and pepper. Bring to a simmer and cook for 10-15 minutes, allowing the flavors to meld.
  10. In a medium bowl, combine the ricotta cheese, egg, Parmesan cheese, and parsley. Season with salt and pepper.
  11. Once the squash is tender, carefully shred the flesh with a fork to create “spaghetti” strands.
  12. Spoon the meat sauce evenly into the spaghetti squash halves.
  13. Top with the ricotta mixture, spreading it evenly.
  14. Sprinkle the mozzarella cheese over the top.
  15. Return the squash boats to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly.
  16. Let cool slightly before serving.

Notes

  • For a vegetarian option, use plant-based ground or extra vegetables like mushrooms and zucchini.
  • Adjust seasonings to your preference.
  • For extra flavor, add a pinch of red pepper flakes to the sauce.
