Enjoy a delicious and gooey Spinach Artichoke Grilled Cheese, perfect for a satisfying lunch. This recipe combines classic grilled cheese comfort with the flavorful addition of spinach and artichoke.

Ingredients

Scale
  • 2 slices of bread
  • 2 tablespoons butter, softened
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup chopped fresh spinach
  • 2 tablespoons chopped marinated artichoke hearts
  • 1 tablespoon mayonnaise (optional, for extra creaminess)

Instructions

  1. Spread butter on one side of each slice of bread.
  2. In a small bowl, combine Monterey Jack cheese, cheddar cheese, spinach, and artichoke hearts. If using mayonnaise, stir it in for extra creaminess.
  3. Spoon the cheese mixture evenly onto the unbuttered side of one slice of bread.
  4. Place the other slice of bread on top, buttered side up.
  5. Heat a skillet or griddle over medium heat.
  6. Carefully place the sandwich in the hot skillet.
  7. Grill for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  8. Slice in half and serve immediately.

Notes

  • For a richer flavor, you can add a pinch of garlic powder to the cheese mixture.
  • Use your favorite bread for this grilled cheese. Sourdough or a hearty whole wheat work wonderfully.
  • If you don’t have marinated artichoke hearts, you can use canned artichoke hearts, drained and chopped.
