Prepare a simple, flavorful rice bowl featuring salmon coated in a thick, sweet, and savory honey soy glaze, served with steamed broccoli and sesame seeds.

Ingredients

Scale
  • 4 (6 oz) salmon fillets, skin on or off
  • 1/2 cup low sodium soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cups cooked white or brown rice
  • 2 cups fresh broccoli florets
  • 1 tablespoon sesame seeds, for garnish
  • 1 tablespoon vegetable oil (for pan-searing)

Instructions

  1. Whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes in a small bowl to create the glaze.
  2. Place the salmon fillets in a shallow dish. Pour half of the glaze mixture over the salmon, turning to coat. Reserve the remaining half of the glaze for basting and serving. Let the salmon marinate for 15 minutes.
  3. While the salmon marinates, steam the broccoli florets until tender-crisp, about 5 to 7 minutes. Set aside.
  4. Heat the vegetable oil in a large non-stick skillet over medium-high heat.
  5. Place the salmon fillets skin-side down (if applicable) in the hot skillet. Cook for 4 to 5 minutes until the skin is crisp.
  6. Flip the salmon. Reduce the heat to medium. Baste the tops of the salmon with some of the reserved glaze. Cook for another 3 to 5 minutes, basting once more, until the salmon is cooked through and the glaze has thickened and become sticky.
  7. To assemble the bowls, divide the cooked rice between four bowls. Top each serving with a salmon fillet and a portion of the steamed broccoli.
  8. Drizzle any remaining glaze from the pan over the salmon and rice. Garnish with sesame seeds before serving.

Notes

  • For a thicker glaze, simmer the reserved glaze mixture in a small saucepan over medium heat for 3 to 5 minutes until it reduces slightly before drizzling it over the finished bowls.
  • You can bake the salmon at 400°F (200°C) for 12 to 15 minutes instead of pan-searing.
  • Substitute asparagus or snap peas for broccoli if you prefer a different green vegetable.
