Make this hearty stuffed pepper soup in one pot for a quick, comforting family dinner that tastes like classic stuffed peppers.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 large green bell pepper, chopped
  • 1 large red bell pepper, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup uncooked white rice, long grain
  • 1/2 cup shredded cheddar cheese, for topping

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned. Drain excess fat.
  2. Add chopped onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in the chopped green and red bell peppers. Cook for 5 minutes until they begin to soften slightly.
  4. Pour in the crushed tomatoes, tomato sauce, and beef broth. Add oregano, basil, salt, and pepper. Bring the mixture to a simmer.
  5. Stir in the uncooked rice. Reduce heat to low, cover the pot, and simmer for 20 to 25 minutes, or until the rice is tender and cooked through. Stir occasionally to prevent sticking.
  6. Ladle the soup into bowls. Top each serving with shredded cheddar cheese before serving.

Notes

  • For a low-carb option, omit the rice and add 1 cup of cauliflower florets during the last 15 minutes of simmering.
  • You can substitute ground turkey or ground sausage for the ground beef.
  • If you prefer a creamy texture, stir in 1/4 cup of heavy cream during the last 5 minutes of cooking.
