Ingredients

Scale
  • 4 large bell peppers (any color), halved lengthwise and seeds removed
  • 1 lb ground turkey
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup tomato sauce
  • 1/4 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the bell pepper halves in a baking dish.
  3. In a large skillet, cook the ground turkey over medium heat until browned. Drain any excess fat.
  4. Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  5. Stir in the Italian seasoning, salt, pepper, and tomato sauce. Cook for another 2 minutes.
  6. Spoon the turkey mixture evenly into the bell pepper halves.
  7. Cover the baking dish with foil.
  8. Bake for 30 minutes.
  9. Remove the foil and, if using, sprinkle with cheese. Bake for another 5-10 minutes, or until the peppers are tender and the cheese is melted and bubbly.

Notes

  • You can substitute ground chicken or lean ground beef for the turkey.
  • Feel free to add other vegetables like zucchini or mushrooms to the filling.
  • For a spicier kick, add a pinch of red pepper flakes to the turkey mixture.
