A rich, dairy-free Alfredo sauce made from soaked cashews, delivering a smooth, creamy texture perfect for pasta.

Ingredients

Scale
  • 1 cup raw cashews
  • 1 cup water (for blending)
  • 1/2 cup vegetable broth
  • 3 cloves garlic, minced
  • 1/4 cup nutritional yeast
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • Pinch of nutmeg

Instructions

  1. Place the raw cashews in a bowl and cover them completely with boiling water. Let them soak for at least 30 minutes, or up to 4 hours for the creamiest result. If you are short on time, soak them in boiling water for 15 minutes.
  2. Drain and rinse the soaked cashews thoroughly.
  3. Combine the drained cashews, vegetable broth, minced garlic, nutritional yeast, lemon juice, olive oil, salt, pepper, and nutmeg in a high-speed blender.
  4. Add 1 cup of fresh water to the blender. Start blending on low, gradually increasing the speed to high. Blend for 1 to 3 minutes until the sauce is completely smooth and creamy, scraping down the sides if necessary. A high-powered blender yields the best texture.
  5. Pour the sauce into a small saucepan. Heat gently over medium-low heat, stirring constantly, until the sauce is warmed through (about 3-5 minutes). Do not boil.
  6. Taste the sauce and adjust salt, pepper, or lemon juice as needed.
  7. Toss immediately with your favorite cooked pasta or use as a topping for vegetables.

Notes

  • For a thicker sauce, reduce the initial amount of water added to the blender by 1/4 cup.
  • If you have a nut allergy, substitute the cashews with an equal amount of raw, hulled sunflower seeds, soaking them for at least 4 hours.
  • To achieve an authentic Alfredo flavor, do not skip the nutritional yeast and lemon juice; they provide the necessary savory and tangy notes.
  • Store leftover sauce in an airtight container in the refrigerator for up to 4 days. Reheat slowly on the stovetop, adding a splash of water or broth to restore the original consistency.
