Sprinkle sesame seeds over the vegetables.
Place a sheet of nori seaweed on a clean surface.
Carefully place one slice of bread, vegetable-side down, onto the nori.
Roll the nori and bread tightly together to form a log.
Slice the log into bite-sized pieces, like sushi rolls.
Repeat with the second slice of bread.
Serve immediately or pack for lunch.
Notes
You can substitute avocado with cream cheese or hummus.
Feel free to add other finely chopped vegetables like spinach or bell peppers of different colors.
For extra flavor, you can add a tiny sprinkle of salt and pepper to the vegetables.
Ensure vegetables are finely chopped so the rolls hold together well.
