Make glossy, tender candied orange slices using a simple sugar syrup method. These homemade orange candies are great for snacking or garnishing desserts.
Wash the oranges well. Slice each orange thinly into rounds about 1/8 inch thick. Remove any large seeds.
Place the orange slices in a medium saucepan. Cover them completely with 4 cups of water. Bring the water to a boil over high heat.
Drain the water immediately. Repeat this boiling and draining process two more times (three times total) to reduce bitterness.
Return the blanched orange slices to the clean saucepan. Add 3 cups of sugar and 1 cup of water.
Bring the mixture to a simmer over medium heat, stirring gently until the sugar dissolves.
Reduce the heat to low and maintain a gentle simmer. Cook for 45 to 60 minutes, turning the slices occasionally, until they become translucent and tender.
Carefully remove the slices from the syrup using tongs and place them on a wire rack set over a baking sheet. Let them drain and dry for at least 4 hours, or preferably overnight, until they are no longer sticky.
If you want to coat them in sugar, toss the dried slices lightly in a small bowl of granulated sugar.
For chocolate dipping (optional): Melt the chocolate with 1 cup of water in a double boiler or microwave until smooth. Dip half of each dried slice into the melted chocolate. Place them back on the wire rack until the chocolate sets completely.
Notes
For a chewier texture, allow the slices to dry for a full 24 hours.
Save the leftover orange syrup; it makes a flavorful addition to cocktails or tea.
Store finished candied orange slices in an airtight container at room temperature for up to two weeks.
