Follow this recipe to make flavorful chicken drumsticks with a crispy skin coated in a thick, sticky honey garlic glaze.

Ingredients

Scale
  • 2 lbs chicken drumsticks, skin on
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
  2. Pat the chicken drumsticks very dry with paper towels. This step helps achieve crispiness.
  3. In a bowl, toss the drumsticks with olive oil, salt, pepper, and garlic powder until evenly coated.
  4. Arrange the drumsticks on the wire rack in a single layer.
  5. Bake for 25 minutes.
  6. While the chicken bakes, prepare the sauce. In a small saucepan, combine honey, soy sauce, minced garlic, rice vinegar, and ginger. Bring the mixture to a simmer over medium heat.
  7. Simmer for 3 minutes, stirring occasionally.
  8. Whisk the cornstarch slurry into the simmering sauce. Continue to cook and stir until the sauce thickens enough to coat the back of a spoon, about 1 minute. Remove from heat.
  9. After the initial 25 minutes of baking, brush half of the honey garlic sauce over the drumsticks.
  10. Return the chicken to the oven and bake for another 10 minutes.
  11. Remove the chicken, brush with the remaining sauce, and bake for a final 5 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  12. Serve immediately.

Notes

  • For extra crispy skin, you can lightly dust the seasoned drumsticks with 1 teaspoon of baking powder before baking.
  • If you prefer an air fryer, cook at 380°F (195°C) for 18 minutes, flipping halfway, then brush with sauce and cook for 3-5 more minutes until glazed.
  • Do not skip drying the chicken skin; this is key for crispiness.
